BREAKFAST A-LA-AMR

The manager of Mara House is an efficient young man named Amr. He is so eager to ensure that we have a good time & that he wont let Mara down! Poor Amr has been somewhat confused that each evening we have chosen to go to an Egyptian Restaurant & not the Indian, Chinese or Macca's who all, allegedly, have 'vedy goot fuut'! I think he has been disappointed that he hasn't been able to cook for us, as he was the Chef of Mara's adjoining restaurant, which got good reviews in Lonely Planet, but is now closed due to the dramatic drop in tourism numbers. On our last morning he surprises us with an Egyptian breakfast that he cooked himself! Omelette... still sizzling because it is in a stone pot heated on a flame to reach very high temps & it keeps its heat, falafels...made of fava beans & mixed with herbs, these patties are then deep-fried and are sooooooooooo delicious I am drooling as I write, a mild feta...creamier than Greek feta & sprinkled with cumin, which actually had a mild nutmeggy flavor, cucumber, tomato & the staple, egyptian bread...a smaller version of pita bread. It was a feast fit for gods, & I REALLY wished our children were here to try this version of 'cooked breakfast' as I felt sure they would love it too! We felt very honored that Amr would do this for us.
